I went to the doctor last week, and the nurse was all like, "You gained five pounds in the last two weeks. Here's your exam room. Now wait an hour to see the doctor."
Ok, it didn't happen exactly like that, but the nurse did say with an absolutely straight, emotionless face that I had gained FIVE POUNDS IN TWO WEEKS.
I'm pretty sure in your third trimester you're supposed to be gaining right around a pound a week. So in this case, I'm an overachiever in the worst way possible.
I didn't cry or even try to deny it. I just texted my sisters and my best friend, "What the junk?!"
Let's face it: I pack on the poundage while pregnant. In normal life, I'm naturally thin. In pregnant life, I want to eat everything in the house that starts with "ca" and ends with "rb."
On desperate nights, I'll even eat apples. I mean, that's when you know you're eating just to be eating.
So when my doctor showed up, I said with a slight hint of panic, "Did the nurse really say I gained five pounds?"
And bless the man, he looked at the chart, nodded and said, "I really need you not to worry about it. You're in the normal range."
Me: "But . . . "
Him: "Seriously. Don't worry about it."
So I didn't. In fact, I ate a Crunchwrap Supreme from Taco Bell on the way home. Take THAT, scale.
This is a long way of saying that probably part of the reason I'm porking up is due to cheesecake-stuffed peaches, or when you don't have peaches as in this case, nectarines.
You don't have to be pregnant to toss back a couple of these beauties, but do be forewarned: They're like eating candy.
Five big pounds worth of candy.
But seriously, don't worry about it.
I'm not.
Doctor's orders.
Cheesecake-Stuffed Peaches/Nectarines
6 peaches, halved and pitted
1/4 c. butter, melted3 T. cinnamon-sugar
4 oz. cream cheese, softened
1/4 c. sugar
1 egg yolks
1 1/2 tsp. vanilla
Preheat the oven to 350 and line a rimmed cookie sheet with parchment paper or tin foil.
Trim a thin slice from the round side of each peach half (so halves stand flat on pan). Dip peach halves in melted butter to coat, and then arrange the peaches, cut sides up, on the cookie sheet. Sprinkle cut side with cinnamon-sugar mixture.
In a mixing bowl, beat cream cheese on medium until smooth. Add sugar, egg yolk, and vanilla. Spoon the mixture into the center of each peach half.
Bake about 30 minutes or until lightly browned and softened. Serve warm or at room temperature.
